What is Amylase?

In plain words

Amylase is an enzyme [a protein that speeds up a chemical reaction] found in saliva and digestive juices from the pancreas. It breaks starch into smaller pieces that other enzymes turn into sugars the body can absorb. Researchers study it to understand digestion and problems with pancreatic function. Prescription enzyme mixtures have established uses, but evidence for amylase supplements in people with normal digestion is limited.

Technical definition

Amylases are glycoside hydrolase enzymes; human α-amylase is a protein produced mainly by the salivary glands and pancreas. Rather than acting through a receptor, it catalyzes hydrolysis of internal α-1,4-glycosidic bonds in starch, producing maltose and shorter carbohydrate chains for further digestion. Amylase is a component of FDA-approved pancreatic enzyme replacement drugs, but dietary supplements containing amylase are not FDA-approved treatments.
